Spoon Biscuits

This is not a cooking show. Spoon biscuits refers to how we ate the bread, not the name of the recipe. I was longing for regular old Southern biscuits from my dad’s recipe, but I knew something had to change. David’s ideal is quite different from mine. He likes biscuits bigger and softer than I do. I always overcook them to his taste, so I tried using the air fryer for a half recipe. It felt like cooking for dolls – tiny bowl, small utensils, little rolling pin, and a small cutting board instead of a pastry sheet. The best part? No leftovers! The biscuits had a delicate crust and melted in my mouth. That’s because they were one step removed from being raw. Next time I will increase the cooking time and take David’s biscuits out while I cook mine another two minutes. That should work out well, because he likes cool food, while I like it piping hot. Well, you know I’m not referring to Jell-o or ice cream. A happy adjustment should be easy when you are cooking for only two people.

David’s biscuits stayed warm until he came in from walking the dog. His were not as raw as mine.

  1. I like big fluffy not-as-cooked biscuits, too. This sounds like a lovely compromise and was very thoughtful of you. At least you know how to fix the issue next time! I am amazed at what all people can prepare in an air-fryer.

  2. Love this. Cooking for two is a definite challenge, they look yummy. I probably like mine right in the middle I love hot coffee and have been known to eat barely cooled cookies (don’t tell, lol) and bread, etc. What did you eat with your biscuits? Jelly, butter, jam, other?

    1. I heat my coffee right after making it with a single serve machine.

      I had butter and two kinds of jam on my biscuits. David doesn’t use butter, but he found four kinds of jam in the refrigerator.

      I used to love the heel of my sourdough bread, letting it barely cool before cutting a small bit. I haven’t made bread regularly for 40 years. I intended to start before John died, but I didn’t get to it . There are too many other fun things to do.

  3. I find it very confusing to hear you yalk of biscuits when they look more like scones. Biscuits to me are what you refer to as cookies. And thewy say we have a language in common, Hugs

  4. Cooking for two is no longer a challenge for us, but then again, we have no room for an air fryer-although we have one in storage. I know about a skillet recipe, but in the summer, was reluctant to turn on the oven. I always forget that the activities center has ovens for people to use while staying at an RV resort.
    When I remember good biscuits, I think of grandmother and her biscuits, hot with butter and molasses! Yum!!

    1. I no longer have an iron skillet. That’s great that you have access to an oven when at an RV resort. My grandmother’s cook made great biscuits, as did my dad. Mine are inconsistent now for lack of practice. Sorghum molasses was/were part of my childhood. Here in NC, I keep a jar on hand.

  6. I love the idea of making biscuits in the air fryer. We use ours several times a week to cook all kinds of vegetables, potatoes, fish and chicken. My first really useful kitchen gadget in a while.

      1. Last night salmon, sweet potatoes and sliced zucchini and yellow squash all in the fryer.(One dish at a time!) If you haven’t tried summer squash I recommend it. Sliced with olive oil and spices(we use salt free blends) and air fried it tastes very sweet and delicious. A new find this summer to use the squash from our farm distribution.

  7. I follow a blog called “In Diane’s Kitchen” and Diane makes so many things with her air fryer that I am amazed. Ordinary things that you wouldn’t expect, like hard-boiled eggs. I was in the store one day and a woman was buying one and I overheard her say “I even make toast in my air fryer!” That amazed me. Those biscuits look delicious. All you need is some sausage gravy over top. It’s been a long time since I had biscuits and gravy. Now I want some.

      1. We used to buy that sausage gravy and my mom made hot biscuits – yum. I hated doing windows so every year when I did the windows, Mom made biscuits and gravy before I went out so I’d be inspired to do a better job. 😉 That’s funny you say that about the hard boiled eggs because I was a day behind in Reader and saw Diane’s post as I scrolled down where I needed to start and saw the picture and title, but hadn’t read it yet. After I commented here, I later read Diane’s post and she said “no, don’t do it – they were rubbery.” She makes a lot of things in the air fryer but said she’ll use her egg steamer instead.

  8. Spoon biscuits, I love it. I actually have a recipe for spoon bread, and when I first read your title, I thought it was going to be a new recipe. Ha! My son has an air fryer at his new place, and he loves biscuits, I’ll have to tell him to look up a recipe for those.
